From the Distributor: This Yuzushu is made with a one-year-old Junmai Sake and Yuzu juice, at a 1 : 1 ratio. This is higher than most Yuzushu produced elsewhere. The yuzu fruit is grown in Wakayama and is juiced with its peel, giving all the qualities of the fruit, sweet, sour & bitter. This example has a marvellous full aroma of fresh yuzu, with a zesty, citrus tart character and a fruit sweet and fresh finish.
Heiwa Shuzo was founded in 1928 and is located just outside Kainan City in Wakayama. The site where the brewery is located was a temple for over 500 years before the brewery was established. It wasn't until 1957 when Sake production commenced full-time. The brewery is located in a valley surrounded by mountains, blessed with high precipitation, resulting in a boundless supply of good quality soft spring water, perfect for brewing Sake.
The 'Tsuru-ume' range was created to reflect the quality of the many local products available in Wakayama. Working directly with Ume & Yuzu farmers allows Heiwa Shuzo to secure some of the finest fruit in the country. Wakayama Ume represents 40% of all Ume grown in Japan and is considered the finest Ume fruit source. Citrus fruit such as lemon, yuzu and Mikan are also grown locally and used to make products in the 'Tsuru-ume' range.

The Holcombe's are a charming family that live within walking distance of our shop. Fortunately for us, they make equally charming gin! Notes of wet slate, herbaceous shrubs and a lovely savoury edge that cuddles up perfectly with a splash of tonic.
From the Producer: Barfold Dry Gin is the foundation gin for Holcombe Distilling. This gin has been developed over a three year period to create an exquisite balance of flavours that will make you wonder why other gins don’t taste like this one. Once you’ve tasted our Barfold Dry Gin, choosing to drink anything else is going to be difficult.
We established Holcombe Distilling in 2015 with the aim to create a family-owned independent distillery that creates high quality gins, and pushes the gin flavour boundaries. We bought a farm in the small Victorian town of Barfold, located 15 minutes outside of Kyneton. It’s beautiful grazing country with rolling hills, large mobs of kangaroos, and plenty of cockatoos and kookaburras patrolling the sky. The region is home to some of Victoria’s best food and wine, and we are proud to be part of a community that is passionate about the things they create. Our gin, and all of our production, is hand-batch distilled and non-chill filtered - because we believe that taste is everything!

Gin aged in Cognac barrels with grated parmesan, capers and bergamot. Mouthfilling gin that is great by its self or with a splash of tonic.
From the Producer: Umami Gin is a product in its own universe. Named after the fifth taste; savouriness, or how we describe it – saltiness without the salt. The base flavour for this spirit comes from South Italian capers which are brought in directly from the cooperative. They’re distilled at 45 degrees to maintain the fresh iodic aroma.
We combine this distillate with an infusion of Parmigiano-Reggiano, Italian parmesan cheese, which is glutamate-rich (the molecule which is responsible for our tongue's ability to taste umami).
Combined with juniper, two other ingredients, and a base of neutral grain spirit, the blend is left to rest in an old cognac barrel for several months. The result is a fresh, lightly savoury gin with an entirely unique flavour profile.
Botanicals: Sicilian capers, Juniper, Parmigiano-Reggiano, Bergamot, ex-cognac barrel finish.
